The summer has flown by, and the school year is officially among us! The too hot weather is done... I think. And I am pretty sure I heard the crunch of a color-changing Autumn leaf under my shoe this morning.
And yes, while I may hate the warm weather; it was most definitely a cupcake, fun filled summer.
The last time I left you...
(whomever "you"may be)
...I was hitting the road for The Wizarding World of Harry Potter.
(Which by the way was amazing.)
I spent one magical week driving to the other end of the U S of A. I drank Butterbeer, stayed in crappy hotels, contracted a foodbourne illness from a fast food burger, and created tons of memories with a great group of friends.
It was wonderful, even though sometimes I was a total grouch because it was a loooong drive.
This summer I got in touch with old friends and made tons of new ones. I hosted a cupcakes fundraiser with my partner in crime, and we traveled across the West side of the state in search of Obama. Oh, and I turned 21! I made thousands of cupcakes, and have ran a couple dozen miles. (Not all at once! Most definitely not.)
And after purchasing some super juicy peaches at the farmer's market, and having nothing to do with them, we let my sister have at it!
The grill was heated up,
And my sister has taken a liking to Bobby Flay.
So it was off to the grill with them!
Grilled Peaches with Cinnamon Sugar Butter
1 stick unsalted butter, at room temperature
1 teaspoon cinnamon sugar
2 tablespoons granulated sugar
Pinch salt
4 ripe peaches, halved and pitted
Canola oil
ICE CREAM (optional: highly recommended)
In a small bowl, combine the butter, sugar, cinnamon, and salt.
Heat the grill to high.
Brush the peach halves with canola oil.
Toss them on the grill until nice and golden.
They'll be tender and cooked all the way through.
Top each peach with the cinnamon butter, and you are set!
Don't forget the ice cream; it's so worth the calories.
(And really, who's counting???)
They were delicious and super simple!
