You've heard of cake pops, right?
The little round balls of cake dipped in white chocolate on the end of a lollipop stick!?
Wow...
Cake, frosting, and white chocolate in lollipop form.
Sounds much too good to be true, doesn't it?
Well, not at all!
And while this project does take a little patience, it's a piece of cake.
(No pun intended!)
((Okay, maybe just a little.))
To start off, let's go back to this "patience" part.
This process really is quite simple, BUTTTT there are multiple parts of this recipe that require chilling time, and you really want to ensure you chill these properly; otherwise, you're in for a potential disaster.
Dun dun dunnnn!
Okay, first thing's first.
1Choose your flavor combination!
(Go creative or go classic! And remember you have THREE different flavor components: the cake, the frosting/jam, and the coating.)
For example, I love the flavor combination of white chocolate and raspberry so I did vanilla cake, raspberry jam, and white chocolate coating.
Or maybe you like S'mores. So how about a chocolate cake with marshmallow creme and graham cracker pieces rolled in, dipped in a coating of milk chocolate.
So once you have chosen your flavors, I think a recipe is in order!
You will need!
One 13 x 9 cake
1 cup of frosting OR 2/3 cup jam
Chocolate of choice for the coating
Lollipop sticks
Once the cake is thoroughly cooled, crumble it until no large pieces remain.

Then add in the frosting or jam, and any mix-ins you want to add. (Graham cracker pieces, chocolate chips, chopped nuts, etc...)
Mix thoroughly!
Portion the dough into balls and roll.
(Now the number of cake balls you get out of a batch depends on how small or large you make them. I'm slightly obsessed with consistency so I use a cookie/small ice cream scoop, and I get about 60 cake balls out of one 13 x 9 cake. Now, if that sounds like an unbelievable amount of cake pops, simply cut the cake in half before crumbling and freeze half the cake, BUTTTTT if you cut the cake in half, remember to cut the amount of frosting/jam in half!)So roll the cake into balls and pop them in the fridge to chill for at least a solid two hours.

Two hours later...
Now remove the cake from the fridge and melt a little bit of the chocolate.
Dip one end of the lollipop stick in the melted chocolate, and stab it into the cake ball.
Do this for all of the cake pops, and then pop them back into the fridge.

The chocolate acts as a glue, and it adheres the lollipop stick to the cake ball.)
Okay, now just a little more patience.
Thoroughly chill the pops once more,
And prepare for the dipping!

You will need to prepare a base to stand the lollipops up in.
(For example a block of styrofoam, a vase full of sugar, etc...)
Allowing them to dry standing upright, will give the cake pops a really nice round look, as opposed to them being flat on top if you set them on parchment or wax paper to dry.
In batches, because if you pull them all out at once they will get too
warm, melt the chocolate coating and dip the cake pops into the chocolate, and stand them up in the sugar, styrofoam, or base of choice.
And then just let them dry!
Or decorate them as you wish!
It's all up to you!
(But remember to work in batches when dipping because if the pops warm up too much while waiting in line to be dipped, they will fall off the stick when being dipped.)
Disastrous! (Sort of... Someone needs to eat the casualties.)
So have fun and enjoy.
Experiment a little, try different flavors, mix-ins, whatever floats your boat! Use different colored chocolates and different colored sprinkles!
But whatever you do, it should always be fun.
